Following the reopening of Paseo on Fremont Ave on January 8th, the sandwiches that drove Seattle crazy are back on everyone’s menu. The new owner Ryan Santwire purchased the infamous Caribbean restaurant at a bankruptcy auction in December, an early Christmas present for Seattlites. Not even two months after Paseo suddenly closed it is open for business, grilling up onions, and now accepting credit cards. Retaining the same recipes and many of the same employees Santwire reopened Paseo under the radar until a customer shared the news on Facebook and sandwiches flew out the door. Santwire has also tried to anticipate demand, especially stocking enough bread, so customers will not have to leave empty handed.
You can visit Paseo in the same pink building on N Fremont Ave on Tuesday through Friday from 11 a.m. to 9 p.m. and Saturday from 11 a.m. to 8 p.m. The Ballard location is expected to reopen in the coming weeks.
